Duties & Responsibilities:
- Manage the Italian kitchen of the hotel.
- Ensure the highest quality of food produced in line with Sofitel standards.
- Effective control food cost by standard recipes, purchasing specs, menu costing, menu creation, etc.
- Undertake daily food ordering following guidelines and procedures establish by Executive Chef.
- Solid experience preferably in a luxury setting.
- Deep and clear understanding of Italian food history, tradition and culture.
- Able to create, develop & implement new recipes and menus.
- Mature, disciplined, committed & a flexible team player with high energy levels; and H.A.C.C.P. knowledge.
MICE Manager

- Develop MICE business leads for the hotel.
- Fully responsible for MICE accounts including contracting, updating profiles and renewing contracts.
- Attend MICE industry events and local community business functions to network and maintain high visibility.
- A first significant MICE experience in a similar capacity with proven track records, preferably in the luxury setting.
- An international exposure on MICE market would be a plus.
- Diploma in tourism or hospitality management.
- Excellent communication skills in spoken and written English.

- Innovate new menus, source premium ingredients, and push the boundaries of fine dining with the brasserie concept.
- Manage all aspects of kitchen operation including food cost control and adherence to food safety and standards.
- Work with top-of-the-line equipment, spacious and well-designed kitchens, and a dedicated team to support your creative vision.
- Lead a team of passionate chefs and provide training for their professional growth.
- A strong foundation in classic French brasserie dishes and techniques is essential.
- Ability to adapt traditional recipes with a modern touch while maintaining the essence of French brasserie cuisine.
- Ability to control budget and food cost, to minimize waste with a sustainable approach, to maintain high-quality ingredients while giving priority to locally produced ingredients.
